A Journey Through Traditions: Armenian Brunch at FOLK, Moscow

On May 25 and 26, I had the incredible opportunity to bring Armenian cuisine to Moscow through a special collaboration with FOLK Restaurant. This event was more than just a brunch—it was a deep dive into Armenian traditions, a celebration of history, and a tribute to one of Armenia’s most iconic dishes: Tolma.

At MOV Restaurant in Yerevan, located between Republic Square and Charles Aznavour Square, Tolma is more than just food—it’s a symbol of Armenian culture, creativity, and diversity.


For this special Armenian Brunch in Moscow, guests experienced this firsthand through unique variations such as:

  • Kimchi Tolma – Chinese cabbage stuffed with bulgur, rice, and barberries.

  • Duck Tolma – served with a smoked pepper sauce.

  • Udoli Tolma – featuring tender lamb chops with mint bulgur.

But our vision extends beyond Tolma. At MOV, we reinterpret classic Armenian dishes, blending tradition with modern techniques. For this special brunch at FOLK, we introduced:

  • Chi Kyufte – Armenian-style tartare served with cheese ice cream.

  • Aveluk Salad – Made with wild sorrel, walnut sauce, and matsoni.

  • Jingyalov Hats Flatbread – A contemporary take on the iconic herb-stuffed bread, paired with Tan.

  • Garni Yarakh – Eggplant stuffed with ground beef and a fermented pepper sauce.

  • Gata with Raspberry – a new spin on the beloved Armenian pastry, perfect for an Armenian-style breakfast on Tsvetnoy Boulevard.



This collaboration with FOLK Restaurant was an incredible opportunity to showcase Armenian cuisine in a modern way, making it accessible and exciting for an international audience. Seeing guests in Moscow embrace the flavors, textures, and stories behind each dish was truly inspiring.

Bringing Armenian cuisine to new places is a journey I’m passionate about, and this event was just another step in sharing our culinary heritage with the world. Looking forward to more exciting collaborations!
